Holiday Ambrosia


Makes 30-34 servings

Ingredients

· 3 can (14 ounces) sweetened condensed milk
· 3 cup (8 ounces) plain yogurt
· 1-1/2 cup lime juice
· 6 cans (11 ounces each) mandarin oranges, drained
· 3 can (20 ounces) pineapple chunks, drained
· 4-1/2 cups halved green grapes
· 4 cups flaked coconut
· 3 cup miniature marshmallows
· 3 cup chopped pecans
· 1-1/2 cup halved maraschino cherries, drained


Directions

1. In a large bowl, combine the milk, yogurt and lime juice. Stir in the remaining ingredients. 

Cover and refrigerate for up to 3 hours.

Watermelon and Cantaloupe Salad with Mint Vinaigrette

Ingredients

  • 1 bunch fresh mint, chopped
  • 1/4 cup lemon juice, from about 1 lemon
  • 1/8 teaspoon amaretto
  • 2 cups watermelon balls, from about half a watermelon
  • 2 cups cantaloupe balls, from about 1 cantaloupe

Directions

In a blender, combine mint, lemon juice, and amaretto. Blend until smooth.

In a large bowl, combine the watermelon and the cantaloupe. Add the vinaigrette and toss. Transfer to a serving bowl and serve.

Honey-Ginger Fruit


Ingredients
  • * 1 cup white grape juice
  • * 3 tablespoons honey
  • * 1 1/2 teaspoons grated fresh ginger
  • * 1 pt. fresh strawberries, halved
  • * 3 oranges, sectioned
  • * 1/2 honeydew melon, chopped
  • * 1 cup seedless green grapes


Preparation

Combine grape juice, honey, and ginger in a large bowl.

Add remaining ingredients, tossing to coat. Serve immediately.

Tropical Fruit Ambrosia with Rum


You can substitute mango nectar or orange juice for the rum, or just do without.

Ingredients

* 1/4 cup sugar
* 1/4 cup water
* 2 tablespoons white rum
* 2 tablespoons fresh lime juice
* 2 cups cubed peeled ripe mango (about 2 mango)
* 2 cups cubed peeled kiwifruit (about 6 kiwifruit)
* 2 tablespoons flaked sweetened coconut, toasted


Preparation

Combine sugar and water in a small saucepan. Bring to a boil, and cook 1 minute or until sugar dissolves. Remove from heat; stir in rum and lime juice. Cool completely.

Combine mango and kiwifruit; add rum syrup, tossing gently. Sprinkle with coconut.

Grams' Fruit Salad


Ingredients:

  • 1 can crushed pineapple
  • 1 can mandarin oranges
  • 1 cup mini marshmellows
  • 3/4 cup shredded coconut
  • 3/4 cup sour cream
  • 1/2 cup pecan pieces

Directions:

Drain fruit and mix all together

Store in fridge!

Morning Tofu/Citrus Smoothie

I actually measured things this morning and recorded their nutritional information... just because I am anal and do things like this.

Ingredients:
  • 1 cup ice
  • 1/5 pkg soft tofu
  • 1/4 cup V8 Acai Mixed Berry Juice
  • 1 cup vanilla soy milk
  • 1 cup orange juice w/ pineapple
  • 3 strawberries
  • 2 tbs super food
  • 2 tbs ground flaxseed

It is DELICIOUS. The tofu gets completely pulverized in the blender so don't let it scare you. It made me nervous too. ((You have to change its water everyday... like a damn plant. Uh weird.))
This recipe made ~32 oz of smoothie. Is this too much? I have no idea.

I added a little bit more liquid to this one than I normally do in the morning for 2 reasons.
1) I actually used a measuring cup
2) I only have so much space in the water bottle I cart to work
